200ml fresh lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

To prepare the Cordial: Combine all the items in a pot, heat until it reaches a light boil, stirring to dissolve. Next, remove from the stove allowing it to cool down fully. Decant to a clean bottle, seal and store in the fridge, where it will keep for up to one month.

For the Premix: Combine every liquids in a big jug, allow it to infuse for 60 minutes, then filter it best through muslin, so it's completely strained.

To serve: Pour 85ml of your batch mix into a mixing glass containing ice, and agitate lightly for a minute to chill. Strain to a chilled martini glass or similar, top with the cranberries adding the final touch with a light spray of the essential oil over the top.
